With the increase in our society, the number of seniors and the prevalence of neurodegenerative diseases, ageing population has become a major public health issue.
Besides predisposing factors that offer no possibility of prevention, there are environmental risk factors affecting the normal and pathological brain ageing, in which it would be possible to take preventive action. Food, especially fat, is part of current research directions.
Faced with this major public health issue and the light of scientific and regulatory developments relating to nutrition and health, development of oil commodities, vegetable or marine, the development of new fat phases and the development of functional foods and food supplements to delay or limit the deleterious effects of brain ageing represent a real economic challenge in the field of nutrition and health.
